Roasted Corn Soup
Ingredients
6 corn cobs -roasted & kernels removed
2 dry red chillies
1 onion sliced
4 gloves of garlic
2 black peppercorns
1 bay leaf
5 jalapeno peppers -- sliced or 10 slices of bottled jalapenos
2 cups of water
1 tbsp olive oil
salt to taste
Method-
In a pressure cooker, heat olive oil. Add bay leaf, peppercorns and red chilly. Stir. Add onions and garlic. Saute till brown. Add corn kernels, water and jalapenos. Cook for 2 whistles. Cool. Liquidize. Before serving, heat and garnish. Serve hot.
