Aloo Baingan |
Oil 3 tsp
1 tsp Mustard seeds
1 tsp Cumin seeds
pinch of Hing
1 big Onion finely chopped
1 tsp Ginger Garlic paste
1 1/2 tsp Coriander powder
1 tsp Cumin powder
1 Tomato chopped
1 tsp Red Chilli powder
1 Potato peeled and chopped
4 to 5 Baingans chopped
1 tsp Garam masala
2 tsp Tomato Sauce
Method
Peel potatoes and cut in to small cubes. Wash and cut baingans in to big pieces.
Heat oil in a kadhai, add mustard seeds, cumin seeds, pinch of hing, onions, mix and fry till it becomes translucent.
Add ginger garlic paste and cook till raw smell from ginger garlic goes away.
Add coriander powder, cumin powder, mix cook for 2 mts.
Add tomatoes, mix and cook for 2 mts.
Add red chilli powder, mix and cook till oil separates from the spices.
Add tomato sauce, mix and cook for a minute.
Add potatoes, sprinkle some salt, water, mix, cover and cook for 15 mts.
Add baingan, some salt, mix, cover and cook till its cooked properly.
Add some garam masala. Garnish with chopped coriander leaves.
Tips:
Add some water for gravy consistency.
Once potatoes and baingans are cut, add them in cold water so that they will no discolor.
