Mix Fruit Kheer
 Ingredients


Mix fruit cocktail  1 tin
Milk  ½ liter
Rice powder  3 tbsp
Green cardamoms  4
Kewra  2 tbsp
Sugar ½ cup
Khoya  250 gm
Almond pistachio  25 gm


Method

Finely chop 1 tin fruit cocktail.Heat ½ liter milk in a pan till it comes to a boil.Add 3 tbsp rice powder and mix well.
Also add ½ sugar and cook till sugar is dissolved.Add chopped fruits and cook on low flame till thickens.Also add 2 tbsp kewra and 250 gm khoya, cook for 2 – 3 minutes.Dish it out, garnish with chopped almond and pistachios.

Lauki contains a lot of water – almost 96 percent is water, and as such is light and easy to digest.It is also low in calories and low in fat, bottle gourd is a wonderful vegetable to include in any weight-loss diet. But for the time being lets forget about the weight-loss benefits of Lauki and have a treat with this wonder vegetable…… try out this Halwa and you will love it, easy to cook and yummy to taste.


LOKI KA HALWA
Ingredients 




Bottle gourd


Khoya 250 gm
Green food color a pinch
Coconut powder 1 packet
Sugar 2 cups
Small cardamom 6
Almond powder as required
Sugar 1 tsp
Oil 2-3 tbsp

Method:

Grate the bottle gourd, drain all the excess water.
Take 2-3 tbsp oil in the pan and add in 1 tsp sugar along with 6 cardamom powder.

Add in the green food color. Cook it and take out the grated bottle gourd. Add in the 2 cups sugar in the pan and add in ½ cup water and make the sugar syrup. 
Add the grated and cooked bottle gourd in the pan again cook it.
Grease a dish and take out the halwa in it.
Garnish it with coconut and almonds. Cool it and serve.

LUCKNOWI  BIRYANI
Ingredients:
Chicken 1/2 kg
Yogurt 1/2  cup
Ginger garlic paste 1 tbsp
Rice 1 ½ cup
White cumin 1 tsp
Small cardamom 6
Chopped green chilies 4
Salt to taste
Fresh milk 1 cup
Saffron as required
Clarified butter 1 cup
For potli stock:
Garlic 1
Ginger 1 piece
Big cardamom 3
Bay leaves 1
Fennel seeds 1 tsp]
Coriander seeds 1 tbsp
Onion 1
Khewra few drops
Method:
Add  chicken in a pan, and add  1 onion, 1 piece ginger, bay leaves, 1 tsp fennel seeds, 1 tbsp coriander seeds, big cardamom and few drops of khewra essence in a potli and add it in the chicken. 
Add in 3-4 cups of water. Make stock and cook it till the chicken tenders. Then take out the stock. Take out all the essence of potli by pressing it.
Crush 1 tsp white cumin and 6 small cardamom. 
Now take 1 cup clarified butter in the pan and add  chopped onion till they are golden brown. Take out half onion and add in 1 cup yogurt in the pan and add  1 tbsp ginger garlic, small cardamom, white cumin and chopped green chilies. cook the chicken.
When the chicken is cooked add in the stock. Then add in the rice and some salt. Cove the pan. When the water dries, add in the chicken and onion. 
From the top add  1 cup fresh milk and saffron. 
Simmer it dish it out and serve.Garnish with sliced eggs.

INGREDIENTS:


Khoya 1/2 kg
loki (bottle gourd)(shredded) 1 cup
Sugar (caster) 3/4 cup
Cardamom powder 1/2 tsp
Clarified butter/ghee 2 tbsp
green food color pinch
Nuts for garnishing
silver paper  for garnishing METHOD:

Boil shredded loki with green food color and drain water .In a pan add loki and half sugar stir it till well cooked. Set a side.In the same pan add ghee and khoya, stir constantly and add cardamom powder. Mix well, add remaining sugar and mix well. Set aside for few minutes.Mix both loki and khoya. Pour in greased tray and leave it overnight or in summer keep it in fridge for 5-6 hours.Cut pieces of your choice.
