Coconut Cake

Coconut Cake


Ingredients 

Butter 125 gm
Coconut essence ½ tsp
Caster sugar 220 gm
Eggs 2
Desiccated coconut ½ cup
Flour 1 ½ cup
Baking powder 1 tbsp
Cream 300 gm
Lemon (Juice) 1 lemon
Milk 1/3 cup
Ingredients for Icing
Icing sugar 2 cup
Desiccated coconut 1 1/3 cup
Egg whites 2
Method
Beat butter and sugar, add essence, beat in eggs one by one, add in desiccated coconut, flour, baking powder, cream, lemon juice and milk, spread mixture in greased and lined cake tin bake for an hour at 180 degrees C.
 For the icing, mix icing sugar with desiccated coconut, egg whites and spread over top of cake.
